Ginger candy preparation : Short glimpses

Our journey towards ginger candy preparation starts after the cultivation of ginger by some of our innovative group of friends.During our last vacation,some of our friends started ginger cultivation aiming to learn something.There cultivation turns out to be more successful.Later,one of our friend Bishal Modi brought a concept about preparing a ginger candy and shared his idea to all of us.All of us supported his idea , afterall its a great concept to turn our cultivation into processed form by using simple knowledge.Then,all of us (all students of 4th semester Bsc.ag) searched out for it and later we found out,  it is so easy to prepare ginger candy then we supposed it before.It took us total 6 days for preparing a sweet ginger candy.We started following simple procedure while preparing it.

The first thing to be consider is the selection of variety.Commonly less fibre content varieties are suitable.The recommended variety kapurkot-1 or ZI 9729 can be use for good candy preparation.In case, if this variety is not available 150-180 days old rhizome of ginger can be used for pareparing it.

Materials required for preparation

  1. Fresh ginger-2kg
  2. sugar-3kg
  3. citric acid (we can also use lemon)-20gm
  4. common salt-200gm

other materials needed are,

  1. stove-1
  2. Pressure cooker-1
  3. Tray-2
  4. Muslin cloth-1 meter long
  5. Filter-1
  6. Large vessel-2
  7. Refractometer-1

Day 1 (2073/10/20)

On first day,we  extracted the fresh ginger from the ground and cleaned it by removing the dirt,soil etc from it.We peeled the outer scale of ginger and made smaller holes or dots into it with the help of fork.After this, the ginger pieces were cut into  1 inch small pieces.We dipped these pieces into 1% salt solution and left it for 12 hours.WP_20170128_17_39_10_Pro.jpg

Day 2(2073/10/21)

We separated the ginger from salt solution and wash it for 3-4 times until all the salty taste disappear from  it.Then, mixed the pieces of ginger with 1% citric acid and place little amount of water just to soak the ginger and boiled it in a pressure cooker for sometime.Softening of ginger indicate that it is ready for preparing candy.After this,we washed it for 2-3 times until all the sour taste disappear from it and 30 degree brix sugar solution is prepared  in another vessel and pieces of ginger were placed in it and boiled for 5 minute  and left as  it is for 24 hours.

Day3 (2073/10/22)

On third day,the ginger dipped in sugar solution were separated  with the help of muslin cloth.Then,50 degree brix sugar solution is prepared by mixing additional 500gm of sugar solution in previously prepared solution and boiled for sometime.Again,we mixed the ginger in it ,boiled it for 5 minutes and left it for 24 hours.WP_20170129_12_32_34_Pro.jpg

Day 4(2073/10/23)

On 4th day,similar procedure was followed.70 degree brix is prepared by adding 500gm sugar,boiled for 5 minutes and again left for 24 hours.

Day 5(2073/10/24)

on 5th day also same process is followed but 80 degree brix is prepared by aading extra 5oogm sugar in 70 degree brix. Boiled for 5 minutes and left of 24 hours.

Day 6(2073/10/24)

On last day ,pieces of ginger were separated from the solution.These pieces were placed in tray and dried in oven for 2 hours or sun dry it for 4 hours.After drying ,now the ginger candy is ready.we can spray the sugar powder over it in order to avoid stickiness.   we can pack it according to our own choice in 40-50 gm small packets. Labelling of packet is done including

  1. Name
  2. Ingredients
  3. price
  4. Manufacture date

5.Expiry date

NOTE:While preparing the candy of 2kg ginger different degree brix sugar is prepared.

30 degree brix =2 litre water +1kg sugar

50 degree brix=30 degree brix+500gm sugar

70 degree brix=50 degree brix +500gm sugar

80 degree brix =70 degree brix+500gm sugar

For preparing 2kg ginger 2kg 500gm sugar is needed.

Through these simple procedure we prepared home made ginger candy , this could be helpful for all and i request all to try it once.

                    The people of this era are more intelligent ,dynamic and enthusiastic beyond the limit.Everyday is going like a river which has never learnt to stop.People are rushing here and there  just because of the hope that ,tomorrow”s  raising sun will definitely brings something new in them.Everyone works for own benefit.But,inspite of the fact that people do work ,they work hard ,they must have transparency or clarity where thy are going .There is a great saying that”if opportunity doesn’t knock you,build the door.It’s not easy to get name,fame.All the people who are popular in this world is just because they have different philosophy of living life.They have seen life with different eye.
